1 tbsp finely chopped ginger
2 cloves crashed garlic
2 tbsp chopped spring onion
200g v2mince
Handful diced carrots, green beans, shiitake mushroom (or any preferred fresh vegetables)
6 tbsp vegetable oil
1 tbsp Shaoxing wine
2 tsp vegetarian oyster sauce
2 tsp light soy sauce
¼ tsp dark soy sauce
1/2 tsp sugar
Salt to taste

Heat the vegetable oil in a seasoned wok over high heat. Add the ginger, garlic, spring onion and stir-fry briefly until it turns golden and aromatic, then add the V2 mince and stir-fry until it sizzles, breaking the mince into smallest pieces with a spoon.

Add in the Shaoxing wine. After half a minute on medium heat, tilt the wok and push the mince up one side so the oil pools in the base. Add the remaining seasoning with the diced vegetables into the oil and continue frying for another 2 minutes. Tilt the wok back and stir in the mince with salt to taste.

Serve over steamed jasmine rice.
